Roast Pumpkin and Garlic Soup
This roast pumpkin and garlic soup recipe is delicious and perfect for an autumn day.

  • 1 kg (35 oz) pumpkin flesh
  • 850 ml (28 fl oz) vegetable stock
  • 425 ml (14 fl oz) milk
  • 1 large onion, chopped
  • 6 garlic cloves, unpeeled
  • 25 g (1 oz) butter
  • Salt
  • Pepper
  • Nutmeg
  • Oil for brushing the pumpkin
To serve
  • Cream or crème fraiche
  • Small cubes of cheese, e.g. cheddar or gruyère
  • Fresh chopped parsley
  1. Take the pumpkin flesh and brush all over with vegetable oil. Place on a baking tray. Scatter the garlic cloves in the spaces.
  2. Bake at 220°C/430°F for 15-20 minutes. Remove from the oven and allow to cool.
  3. When cool, dice the pumpkin flesh and peel the garlic cloves.
  4. Melt the butter in a pan over a medium heat. Add the onions and stir-fry until the onions start to turn brown at the edges (about 5 minutes).
  5. Turn the heat right down and allow the onions to sauté gently for about 15 minutes until soft and sweet-smelling.
  6. Add the stock and the milk. Turn up the heat and bring the pan to a gentle simmer.
  7. Add the pumpkin and garlic and bring back to the simmer. Cover and simmer gently for 20 minutes.
  8. Allow the soup to cool slightly before processing in a food processor or using a hand blender. Pass the soup through a sieve and transfer to a clean pan.
  9. Season with salt, pepper and a few pinches of nutmeg. Bring back to the boil and serve.
Titli's Tips
If you prefer you can roast the pumpkin flesh with the skin on and remove the skin before you add the flesh to the soup.
