Rainbow Cake
The Rainbow cake is actually a Victoria sponge with food colouring added. It’s great for kids’ parties!

Ingredients
  • 175 g (6 oz) self-raising flour
  • 175 g (6 oz) caster sugar
  • 175 g (6 oz) margarine or butter at room temperature
  • 3 medium or large eggs
  • Food colouring (optional)
  • Icing sugar for dusting
For the filling
  • Strawberry jam
  • 250 ml (8 fl oz) of double cream, whipped
Instructions
  1. Beat together the margarine and sugar until the mix is creamy and fluffy.
  2. Beat the eggs in a bowl. Add a spoonful at a time into the cake mix and beat well.
  3. When all the egg has been added, sift in the flour in 4 stages. After each stage fold the flour into the mixture with a metal spoon or spatula.
  4. Grease two 8″ (20 cm) sandwich tins and cover the base of each tin with baking paper.
  5. If you don’t want to colour the cake pour half of the mixture into each of the sandwich tins. Otherwise split the cake mix in half, then split each half according to the number of colours you will use. Add a small amount of colour to each part and fold it in. Pour the coloured cake mixtures into the sandwich tins.
  6. Bake in the oven at 170°C for 25 minutes.
  7. Remove from the oven and allow to cool for a couple of minutes before removing them from their tins. Then allow to cool completely.
  8. Spread a layer of jam on one half of the cake, then a layer of whipped cream. Place the other half of the cake on top and dust with icing sugar.
Titli's Tips
There are a few important points to help make your sponge light and fluffy:

- Beat the margarine and sugar together really well to incorporate lots of air into the mixture.
- Sift in the flour from at least 30 cm above the mixture to help aerate the flour.
- Keep the oven door closed during baking. A rush of cold air into the oven could make your sponge collapse!
