Pavlova is a dessert of light and fluffy meringue, cream, and a topping of your choice (usually fruit).

  • 4 eggs at room temperature
  • 225 g (8 oz) sugar
  • 1 tbsp cornflour (corn starch)
  • 1 tsp distilled or white vinegar
  • 284 ml (10 fl oz) whipping cream or double cream
  • 500 g (1 lb) fruit – soft fruits and berries are best imho
  • Icing sugar for dusting
  1. Separate the egg yolks from the whites, making sure than none of the yolk is in with the whites.
  2. Place the whites in a clean bowl and whisk on low speed for a few minutes. When the whites start to form a stable foam increase the speed. Increase the speed again after 4-5 minutes.
  3. Eventually the bubbles in the egg white will become very small and tiny peaks can be formed when the whisk is lifted from the mixture. Mix together the sugar and cornflour and sprinkle it slowly into the egg whites with beating.
  4. When all the sugar has been added increase the speed again and whisk for 2 minutes before adding the vinegar. Continue to whisk at high speed until you can form stiff peaks with the whites when you remove the whisk. NB: Depending on your mixer this could take 15 minutes or more!
  5. Place a piece of baking paper on a tray and pour on the egg whites. Spread out into a circle and create a shallow depression in the middle of the meringue. Bake at 120°C for about 60 minutes.
  6. Turn off the oven and allow the meringue to cool inside the oven.
  7. When the meringue has cooled, peel off the paper carefully and place the meringue on a plate.
  8. Whip the cream and spread it onto the meringue. Place the fruit on top, dust with icing sugar and serve.
Titli's Tips
The addition of cornflour into the mixture makes the meringue crisp on the outside and marshmallow on the inside. This makes the meringue quite delicate, so handle with care!

If your meringue starts to brown it means that your oven is too hot and you should cook the meringue at a slightly lower temperature for longer.

Patience can be a virtue when beating the egg whites in this recipe. Once all the ingredients have been added I leave my mixer on high speed and go and have a coffee…
