Mushroom Pilao Rice
Mushroom Pilao uses spices which compliment the earthy flavour of the mushrooms to give a very moorish and tasty rice dish.

Instructions
- Soak the rice in cold water for 5 minutes, then drain.
- Heat the oil in a pan. Add the garlic, spices and mushrooms. Stir-fry for 2-3 minutes.
- Add the tomato paste, the rice, and 250 ml (1 cup) of water.
- Bring to the boil, cover, and cook over a very low heat for 10-15 minutes until all the water is absorbed.
- Fluff up the rice with a fork and serve.
Titli's Tips
For a more colourful variation, add a handful of frozen peas into the pan during the final cooking.
