Malai Kebab
Malai kebabs are a very simple vegetarian kebab, but they are more than a little spicy! The same mixture can be used for the dumplings in Malai Kofta Curry.

  • 500 g (1 lb) mashed potato
  • 100 g (3 oz) paneer, finely chopped (or cottage cheese)
  • 1 onion, finely chopped
  • 4 green chillis, finely chopped
  • 2½ cm of ginger, finely chopped
  • 1 tbsp chopped coriander
  • ½ tsp chilli powder
  • Juice of half a lemon
  1. Combine all the ingredients in a bowl and mix well.
  2. Press the mixture into kebab shapes. Whatever you like really – balls, sausages, Mickey Mouse shapes…
  3. Either: Shallow fry until golden. Or grill under a hot grill for 10 minutes, turning frequently. Or bake in the oven at 150°C for 10 minutes.

The recipe as shown makes a very spicy kebab. Adjust the chillis to your own taste.
