Karahi Chicken With Mint
A delightful stir-fry style dish of chicken with fresh mint, coriander and ginger flavours. Mouth-watering!

Instructions
- Bring the chicken to the boil in about 250 ml (8 fl oz) water and simmer for 10 minutes.
- Remove the chicken with a slotted spoon. Reduce the remaining water to less than 100 ml (~4 fl oz) and pour into a bowl.
- Heat the vegetable oil in a pan and stir-fry the onions for 2 minutes.
- Add in the chicken and stir-fry for 3 minutes.
- Add in the chillis, ginger, lemon juice, coriander, mint, tomatoes and the salt. Stir-fry for 3 seconds then add the chicken-water. Stir-fry for another 3 minutes and serve.

Cook this in a large pan or wok if you don’t have a karahi.
