Karahi Chicken With Mint
A delightful stir-fry style dish of chicken with fresh mint, coriander and ginger flavours. Mouth-watering!

  • 400 g (14 oz) chicken breast, cut into strips
  • 8 spring onions, chopped
  • 3 tomatoes, de-seeded
  • Juice of half a lemon
  • 1 tbsp chopped coriander
  • 1 tbsp chopped mint
  • 2 dried red chillis, broken
  • 1 tsp salt
  • 1 tsp grated ginger
  • 2 tbsp vegetable oil
  1. Bring the chicken to the boil in about 250 ml (8 fl oz) water and simmer for 10 minutes.
  2. Remove the chicken with a slotted spoon. Reduce the remaining water to less than 100 ml (~4 fl oz) and pour into a bowl.
  3. Heat the vegetable oil in a pan and stir-fry the onions for 2 minutes.
  4. Add in the chicken and stir-fry for 3 minutes.
  5. Add in the chillis, ginger, lemon juice, coriander, mint, tomatoes and the salt. Stir-fry for 3 seconds then add the chicken-water. Stir-fry for another 3 minutes and serve.

Cook this in a large pan or wok if you don’t have a karahi.
