Grilled Chicken with Thai Flavours
Grilled chicken doesn’t have to be boring. Pep it up with a filling of Thai flavours!

  • 2 chicken breasts
  • 2-3 tbsp low-fat cream cheese, depending on the size of the chicken breasts
  • 1 red chilli, deseeded and chopped
  • 1 tbsp chopped fresh coriander
  • 1 tsp ginger paste or grated ginger
  • 4 thin slices of lime, cut into halves
  1. Mix the cream cheese, chilli, coriander and ginger in a small bowl.
  2. Turn each chicken breast on its side and cut pockets into them using a sharp knife. Fill the pockets with the filling mixture and close the pockets with a couple of cocktail sticks.
  3. Make four slits into the top of each chicken breast and place a lime slice in each slit.
  4. Place under a medium grill for 25-30 minutes until the chicken is cooked. Remove the lime pieces and serve.
Titli's Tips
If the chicken starts to burn during grilling, cover with a piece of aluminium foil and continue.

Serve with steamed and/or roasted vegetables for a healthy meal.

You can use this principle to put other flavours into the chicken – maybe add some mustard or some curry powder into your cream cheese. Or just fill it with a selection of chopped fresh herbs. Grilled chicken need never be boring again!
