Gratin Dauphinois
Delicious and creamy, this Gratin Dauphinois recipe is easy to follow and can be adapted to your tastes.

  • 500 g (1 lb) waxy potatoes
  • 350 g (12 fl oz) milk
  • 150 g (4 fl oz) whipping cream or crème fraiche
  • 1 garlic clove
  • Salt
  • Pepper
  • Nutmeg
  • Butter
  1. Peel the potatoes and slice thinly - each slice should be about the thickness of a coin.
  2. Cut the garlic clove in half and rub it all over the inside of the gratin dish.
  3. Lightly grease the inside of the gratin dish with a little butter.
  4. Place a layer of potatoes in the dish, overlapping each slice by about one half.
  5. Season with salt, pepper and a little nutmeg.
  6. Continue adding layers of potato, seasoning between each layer.
  7. Mix together the milk and cream and pour into the gratin dish.
  8. Bake at 150°C/300°F fan oven, 170°C/340°F normal oven for about 1½ hours.
Titli's Tips
There are some common variations of gratin dauphinois. Add a chopped clove of garlic to the bottom of the gratin dish, or sprinkle a little cheese between each potato layer.

Some recipes require you to boil the potato slices in the milk/cream mix before arranging in the dish. This is to reduce the overall baking time and has no effect on the flavour of the gratin dauphinois.
