Gooseberry Crumble
Gooseberry crumble is a very British dessert and this gooseberry crumble with its light crumble topping is just so simple to make.

  • 1 kg (2 lb) ripe gooseberries
  • 100 g (3½ oz) sugar
  • Juice of 1 lemon
  • ½ tsp nutmeg
For the crumble topping
  • 250 g (8 oz) plain flour
  • 125 g (4 oz) sugar
  • 125 g (4 oz) rolled oats
  • 125 g (4 oz) butter or margarine
  • ½ tsp nutmeg
  1. Prepare the crumble topping by putting the flour and butter in a bowl and rubbing them together.
  2. Add the oats and sugar and rub well between your fingers until you have a light crumble mixture. Add the nutmeg and mix well.
  3. Wash the gooseberries and pour into an 8" (20 cm) square baking dish. Pour on the lemon juice and sprinkle on the sugar.
  4. Sprinkle on the crumble topping and even out gently. Bake at 160°C/320°F fan oven, 180°C/360°F conventional oven for 30-35 minutes.
  5. Allow to cool for 10-15 minutes before serving with custard or ice cream.
Titli's Tips
You can top and tail the gooseberries if you wish, although I only ever top and tail gooseberries if they are not ripe. If using early, unripe gooseberries it's as well to double the quantity of sugar that you sprinkle on the gooseberries.

Don't press the crumble topping down when you've sprinkled it. Just even it out gently and you'll keep the crumble topping light and delicious.
