Example frittata for 6 people
  • 6 eggs, beaten
  • 1 can of anchovies, chopped
  • 6 spring onions (scallions), chopped
  • 1 red capsicum, chopped
  • 1 tsp cumin
  • 1 tsp allspice
  • 3 tbsp fresh chopped parsley
  • 3 tbsp olive oil
  • Salt
  • Pepper
  1. Heat 2 tbsp of olive oil in a pan and sauté the vegetables until soft
  2. Combine the eggs, herbs, spices and anchovies in a bowl. Season with salt and pepper and add the sautéed vegetables.
  3. Heat the remaining olive oil in a pan over a low heat. Pour in the frittata mixture and allow to cook very gently for about 10 minutes or until set.
Titli's Tips
The kind of frittata you make is limited only by the ingredients you have to hand and your imagination. Frittatas can include cooked meat, potato, onions, peppers, herbs, spices, tomatoes,... One nice variation is to sprinkle cheese on the set frittata and place under a grill to melt the cheese on top.

Serve with a salad or chips (fries) or both!
