Fish Pie
Fish Pie is a very simple, tasty and versatile dish. You can adapt this recipe to the availability of fish in your area.

Ingredients
  • 500 g (16 oz) skinless fish fillet
  • 150 g (5 oz) cooked and peeled prawns
  • 150 g (5 oz) tinned sweetcorn
  • 150 ml (5 fl oz) pouring cream or crème fraiche or fromage blanc or cream cheese or…
  • 150 ml (5 fl oz) milk
  • 100 g (3½ oz) breadcrumbs
  • 60 g (2 oz) grated cheese
  • 50 g (2 oz) peas (tinned or frozen)
  • 3 tbsp cornflour (corn starch)
  • Salt
  • Pepper
Instructions
  1. Cut the fish into bite-sized pieces and place into a bowl with the prawns. Add in the cornflour and mix well.
  2. Add in the peas and sweetcorn. Mix well and pour the mixture into a casserole dish or pie dish. Season well.
  3. Whisk together the cream and milk in a bowl and pour over the pie mixture.
  4. Combine the cheese and breadcrumbs in a bowl and spoon over the top of the pie.
  5. Bake in an oven at 190°C for 25 minutes.

Serve with fresh vegetables.

This is definitely a recipe to experiment with! You can use whatever fish you like for this pie: - Smoked fish adds a nice flavour to the pie.
- Use other shellfish instead of prawns.
- Try sprinkling the pie with grated parmesan before baking
- Add a pinch of dill into the pie mix.
