Curry Pizza (Parasaala)
If what we call the pizza today had been invented on the Indian Subcontinent instead, it might look a little something like this…

For the paratha base
  • 200g (7 oz/1 cup) flour
  • 2 tsp melted ghee or butter
  • 80 ml (1/3 cup) water
  • Pinch of salt
  • Melted ghee for brushing
For the masala
  • 400g (14 oz) tin of chopped tomatoes
  • 1 onion, finely chopped
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp chilli powder
  • ½ tsp turmeric
  • ½ tsp salt
  • 1 tbsp garlic & ginger paste
  • 1 tbsp ghee
For the topping
  • Chicken tikka
  • Paneer
  • Green chillis, chopped
  • Fresh coriander, chopped
  1. Mix the flour and ghee in a large bowl. Add in a pinch of salt.
  2. Add the water and mix to a smooth dough. Add more water a teaspoon at a time if necessary. Knead for a few minutes, cover and leave to rest for ½ hour.
  3. Roll out the ball on a floured surface to about 10-12″ (25-30 cm) in diameter.
  4. Brush the surface of the paratha with ghee. Make a cut from the centre off the paratha to the edge. Roll the paratha up into a cone.
  5. Press the top of the cone into the base and form into a disc. Roll the dough into a disc once more and repeat Step 4 one more time.
  6. By now you should have a GIANT paratha. Cook the paratha for a minute or two each side on a medium-hot surface (tava or frying pan). Brush lightly with melted ghee.
  7. Prepare the masala: Gently fry the onions and garlic & ginger paste in a tbsp of ghee until they start to brown.
  8. Add in the tomatoes and spices. Mix, cover and simmer for 20 minutes.
  9. The masala should be quite thick. If yours isn’t, simmer it with the lid off for a further 5 minutes or so.
  10. Construct your “pizza”: Spread the paratha with the masala and add your toppings. It’s ready!!!!!
Titli's Tips
You can add whatever toppings you want. Try it with some fried okra (bhindi), or chick peas (chana), or fried onion for a vegetarian alternative. The only rule is… keep it Desi!
