Shepherd’s Pie (or Cottage Pie)
Cottage Pie (with beef) or Shepherd’s Pie (with lamb) are very simple dishes which are ideal for a mid-week supper. They can even be prepared a few days in advance so reducing the need to cook when you get home, and yet still have a hot, home-made meal!

Ingredients
  • 1 kg (2 lb) potatoes, peeled and diced
  • 500 g (1 lb) minced lamb (for shepherd’s pie) or beef (for cottage pie)
  • 1 onion, chopped
  • 4 tbsp tomato paste
  • 4 tbsp of milk
  • 1 tbsp flour
  • ½ tsp salt
  • 1 stock cube
  • 2 tbsp vegetable oil
  • Margarine or butter for the mashed potato
  • Dried tarragon (optional)
Instructions
  1. Heat the oil in a pan and sauté the onions for 5 minutes. Meanwhile put the potatoes in a pan of water and bring to the boil.
  2. Add the minced meat to the pan and stir-fry gently until brown. When the potatoes come to the boil, simmer for about 15 minutes or until tender then drain.
  3. Mix the flour with 3 tbsp water and add to the meat & onion pan. Add in the salt, the tomato puree, and crumble in the stock cube.
  4. Add 250 ml (8 fl oz) of water. Bring to the boil and simmer for 10 minutes.
  5. Add the knob of butter or margarine to the drained potatoes, together with the milk. Mash coarsely then add in a couple of pinches of tarragon. Continue mashing until smooth.
  6. Cover the base of a large casserole dish with a layer of mashed potato. Pour on the meat mixture, then add a final layer of mashed potato.
  7. Make a pattern on the top of the pie with a fork then add a few small dollops of butter or margarine on top. Bake in the oven at 180°C for 30 minutes.
Titli's Tips
You can add all sorts of things into the meat mixture. Popular variations include diced carrots, or adding a tsp or two of Worcestershire Sauce. For a slightly spicier version add ½ tsp of cumin.

Another variation includes sprinkling some grated cheese on the top of the pie before baking.

The pie can be prepared in advance and placed in the fridge before it’s final bake. That’s handy if you want a quick meal when you get home!
