Coq au Vin
Coq au vin is a very simple dish of chicken cooked in red wine. It's easy to make and rich in flavour.

Ingredients
  • 1 jointed chicken or a bunch of chicken pieces with the skin on
  • 1 bottle of red wine
  • 250 g (8 oz) small onions or shallots
  • 250 g (8 oz) mushrooms
  • 250 ml (8 fl oz) chicken stock
  • 2 tbsp olive oil
  • 2 tbsp plain flour
  • 1 tbsp butter
  • Bouquet garni
  • Salt
  • Pepper
Instructions
  1. Season the chicken pieces well then place skin side down into a medium hot pan. Cook for 10-12 minutes until golden, turning once. Remove from the pan and put to one side.
  2. Heat the oil in a pan oven a medium heat. Add the onions and cook until evenly browned.
  3. Meanwhile heat the butter in a pan oven a medium heat. Add the mushrooms and sauté until browned.
  4. When the onions have browned add the flour, stir and cook for 2 minutes.
  5. Add the wine and bring to the boil. Simmer for 1 minute.
  6. Add the chicken pieces, mushrooms, bouquet garni and chicken stock. Cover and simmer for 45- 50 minutes.
  7. Remove the chicken and vegetable from the pan and boil the remaining liquid to reduce by one third.
  8. Return the chicken and vegetables to the pan and simmer for 5 minutes to heat through before serving.
Titli's Tips
You can serve this dish with anything you like but we prefer to eat it with a big chunk of French bread to mop up the delicious gravy!
