Coq au Vin
Coq au vin is a very simple dish of chicken cooked in red wine. It's easy to make and rich in flavour.

- Season the chicken pieces well then place skin side down into a medium hot pan. Cook for 10-12 minutes until golden, turning once. Remove from the pan and put to one side.
- Heat the oil in a pan oven a medium heat. Add the onions and cook until evenly browned.
- Meanwhile heat the butter in a pan oven a medium heat. Add the mushrooms and sauté until browned.
- When the onions have browned add the flour, stir and cook for 2 minutes.
- Add the wine and bring to the boil. Simmer for 1 minute.
- Add the chicken pieces, mushrooms, bouquet garni and chicken stock. Cover and simmer for 45- 50 minutes.
- Remove the chicken and vegetable from the pan and boil the remaining liquid to reduce by one third.
- Return the chicken and vegetables to the pan and simmer for 5 minutes to heat through before serving.
Titli's Tips
You can serve this dish with anything you like but we prefer to eat it with a big chunk of French bread to mop up the delicious gravy!
