Chocolate Soufflé
Chocolate soufflé made with this recipe wont collapse into a mess within a minute or two, giving you time to serve it up without rushing.

  • 100 g (3½ oz) chocolate with 50-55% cocoa solids
  • 6 egg whites
  • 4 egg yolks
  • 4 tbsp cornfour (cornstarch)
  • 4 tbsp granulated sugar
  • 25 g (1 oz) butter
  • 1 tsp vanilla flavouring
  • Pinch of salt
To prepare the soufflé dish or ramekins
  • Butter

  1. Prepare the dish(es): Liberally butter the inside of the dish(es). Add in a tsp or two of sugar and roll around to completely coat the inside of the dish(es). Pour out any excess sugar.
  2. Melt the chocolate and butter together in a bowl on a pan of boiling water (or in a microwave). Put to one side while you...
  3. Beat the eggs yolks and vanilla flavouring together for about 1 minute. Add the cornstarch and beat well for 3-4 minutes. The mixture should be quite thick and flow slowly.
  4. Pour the beaten egg yolks into the chocolate and mix well. Beat for a minute or so with a wooden spoon until the mixture shines when you stop stirring it.
  5. In a clean, grease-free, dry bowl and using a clean, grease-free, dry whisk beat the egg whites and the salt until they become frothy. Add in 1 tbsp of the sugar and beat for 30 seconds.
  6. Add in another tbsp of sugar and beat for 30 seconds. Add the remaining sugar and beat well until you achieve stiff peaks.
  7. Add one quarter of the egg whites into the chocolate and fold them together to loosen up the chocolate.
  8. Pour the chocolate into the remaining egg whites and use a metal spoon to fold them together.
  9. Spoon or ladle the mixture into the prepared dish(es). Bake at 200°C (390°F) for 10 minutes.
  10. Dust with icing sugar and serve.
Titli's Tips
It's important to fold the egg whites and chocolate together to keep as much of the air in the mixture as possible.

These soufflés will shrink as they cool but not by a lot and not very quickly. There is plenty of time to get them out of the oven and to the table before they start to shrink.

Serve with cream, vanilla ice cream, or chocolate sauce.
