Chocolate Mousse
Chocolate mousse is really easy to make and makes a fantastic dessert to serve to friends!

  • 200 g (7 oz) dark or milk chocolate
  • 4 eggs, split into whites and yolks
  • 25 g (1 oz) butter
  • 3 tbsp icing or caster sugar
  • Mint leaves and whipping cream for garnish
  1. Melt the chocolate and the butter in a bowl over a pan of boiling water.
  2. Add in 4 tbsp of water and the beaten eggs yolks. Mix well then remove from the heat.
  3. Add a pinch of salt to the egg whites and whisk to soft peaks.
  4. Sprinkle on the sugar and beat again until the whites are firm.
  5. Add about ¼ of the egg whites into the chocolate mixture and mix in with a metal spoon or rubber spatula using a cutting and swirling motion.
  6. Mix in the remaining egg whites using the same technique.
  7. Put the mixture into 4 ramekins or sundae glasses. Wipe any spills with a damp cloth, then place in the fridge for at least 2 hours to set before serving.
Titli's Tips
The cutting and swirling action during mixing is important to keep the air in the mixture. If you use a blunt instrument like a wooden spoon your mousse will end up more like chocolate truffles!

Instead of water you can add orange juice to make a chocolate orange mousse. Delicious!
