- Place the lime juice, rind, sugar and cinnamon in a large bowl and mix well. Season lightly with salt and pepper.
- Add the chicken and stir to coat the chicken. Cover and leave to marinate for about an hour.
- Thread the chicken pieces and mango pieces onto skewers. Grill (broil) or barbecue for 10-12 minutes, turning occasionally.

Serve on a small bed of rice with a salad.
