Chicken Handi
Chicken Handi is traditionally cooked in a handi (a cooking pot with a lid). You can use any pot or pan with a lid for this rich and somewhat spicy dish.

Instructions
- Heat the oil or ghee in a pan and fry the chicken for about 5 minutes until sealed.
- Remove the chicken from the pan and put to one side.
- Stir-fry the onions in the same oil until browned.
- Add the garlic & ginger paste, the chillis and the tomatoes. Cover and simmer gently for 20-25 minutes or until the tomatoes have completely broken down.
- Add in the spices, yoghurt and the chicken, mix well, cover and simmer gently for 25 minutes.
- Garnish with coriander and a green chilli to serve.

Any pan with a lid can be used for this dish. If you want to impress your guests you could serve it up in a decorative casserole dish.
