Chicken Handi
Chicken Handi is traditionally cooked in a handi (a cooking pot with a lid). You can use any pot or pan with a lid for this rich and somewhat spicy dish.

Ingredients
  • 500 g (1 lb) chicken
  • 125 ml (4 fl oz, ½ cup) plain yoghurt
  • 3 tomatoes, chopped
  • 2 medium onions, sliced
  • 3 green chillies, chopped
  • 1 tbsp garlic & ginger paste
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp chilli powder
  • ½ tsp turmeric
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 4 tbsp ghee or vegetable oil
Instructions
  1. Heat the oil or ghee in a pan and fry the chicken for about 5 minutes until sealed.
  2. Remove the chicken from the pan and put to one side.
  3. Stir-fry the onions in the same oil until browned.
  4. Add the garlic & ginger paste, the chillis and the tomatoes. Cover and simmer gently for 20-25 minutes or until the tomatoes have completely broken down.
  5. Add in the spices, yoghurt and the chicken, mix well, cover and simmer gently for 25 minutes.
  6. Garnish with coriander and a green chilli to serve.
Titli's Tips
Any pan with a lid can be used for this dish. If you want to impress your guests you could serve it up in a decorative casserole dish.

To make a version of butter chicken you can also add a cup of melted butter with the yoghurt. Cholesterol attack! Cholesterol attack!
