Chicken Enchiladas
Chicken Enchiladas is just one of many classic Mexican dishes. This very simple recipe uses straightforward ingredients to make a delicious meal. Just make sure you use MILD chilli powder in your enchilada sauce!!!

- Fry the chicken over a medium low heat in the olive oil for about 15-20 minutes until cooked.
- Heat the vegetable oil in a pan and add the flour. Cook for about a minute until the flour starts to brown.
- Carefully add 300 ml (10 fl oz) of water into the flour/oil mixture and beat with a whisk to remove lumps. Add in the chilli and garlic powders and bring to the boil. Simmer for 10-15 minutes.
- To make the enchilada place a flour tortilla on a plate, spread on a spoonful of enchilada sauce, add pieces of chicken, and roll into a big, fat cigar shape.
- When you have rolled all your cigars, er… I mean tortillas pour on some enchilada sauce and garnish with the onion, olives and cheese.
- Place under a hot grill to melt the cheese, then serve.
Titli's Tips
Don’t panic if a skin starts to appear in your enchilada sauce. Just whisk it in!
