Carrot Halwa
Carrot halwa is such a simple and colourful dessert to make. Ideal after a spicy curry.

  • 500 g (1 lb) carrot, grated
  • 500 ml (16 fl oz) milk
  • 200 g (7 oz) sugar
  • 2 tbsp raisins
  • 2 tbsp sliced almonds
  • 2 tbsp unsalted pistachios
  • Seeds from 8 green cardamoms
  • 2 tsp ghee
  1. Bring 100 ml (4 fl oz) of water to the boil in a pan. Add in the carrots and cook for 5 minutes.
  2. Pour in the milk and cook on a low heat for 1 hour.
  3. Add in the sugar and cook until the carrot becomes a thickish mush.
  4. Add in the cardamom seeds and the ghee. Cook for 2-3 minutes.
  5. Add in the raisins, stir and serve. Garnish with the almonds and pistachios.
Titli's Tips
For extra decadence, add in some crumbled paneer or cottage cheese just before serving.
