Butter Chicken (Chicken Makhani)
Butter Chicken (or Chicken Makhani) is a popular dish at most Asian restaurants. This slightly spicy curry has a rich flavour.

Ingredients
  • 500 g (16 oz) cubed chicken
  • 3 tbsp butter
  • ¼ cup single (pouring) cream
For the marinade
  • 250 ml (8 fl oz, 1 cup) plain yogurt
  • 2 tsp garlic & ginger paste
  • 2 tsp lemon juice
  • 1 tsp tomato paste
  • ¼ tsp ground cardamom
  • ¼ tsp garam masala
  • ¼ tsp paprika
For the sauce
  • 500 g (16 oz) passata (seived tomatoes)
  • 1 large onion, diced
  • 2 tbsp ghee or butter
  • 1 tbsp garlic & ginger paste
  • ¼ cup dried fenugreek (methi) leaves
  • ¼ cup dried curry leaves
  • 6 green cardamoms
  • ½ tsp salt
  • ½ tsp sugar
  • ½ tsp chilli powder
  • ¼ tsp ground cloves
  • ¼ tsp ground cinnamon
Instructions
  1. Combine all the marinade ingredients in a bowl and mix well.
  2. Combine the chicken and the marinade. Allow to stand in the ‘fridge for at least 2 hours.
  3. Prepare the sauce: Heat the 2 tbsp of ghee in a pan and sauté the onions gently for 3-4 minutes until soft. Add the garlic & ginger paste and cook for a further 2 minutes.
  4. Add the dry spices (but not the leaves) and cook for 30 seconds, then add the passata and dried leaves. Mix well and simmer gently for 10 minutes.
  5. Remove the sauce from the heat and allow to cool slightly. Process well in a food processor or with a hand blender, then pass the sauce through a sieve. Place the sauce in the ‘fridge until ready to use.
  6. Heat the 3 tbsp of butter in a pan. Add the chicken and its marinade and cook gently for 5 minutes.
  7. Add in the tomato sauce, bring to the boil, cover and simmer gently for about 15 minutes.
  8. Add in the cream and serve.
Titli's Tips
Garnish with coriander and serve with roti or rice.

You can also use chicken tikka with the sauce to make a butter chicken which has a slightly smokey flavour. Simply add the chicken tikka to the butter in Stage 6, pour on the tomato sauce and simmer for just a few minutes.
