Buffalo Wings
This baked Buffalo Wings recipe will give you crispy hot wings without the frying. Make them as spicy as you like!

Ingredients
  • 700 g (1½ lb) chicken wings (about 12)
  • 4 tbsp hot pepper sauce (e.g. Frank's)
  • 3 tbsp melted butter
  • 2 tsp paprika
  • ½ tsp salt
  • Celery sticks to serve
For the Blue Cheese Dip
  • 125 g (4 oz) sour cream
  • 125 g (4 oz) mayonnaise
  • 100 g (3½ oz) blue cheese
  • 1 garlic clove, crushed
  • 2 tsp white vinegar
Instructions
  1. Remove the wing tips if not already done so by your butcher.
  2. Cut the wings in half through the joint (be careful!) and put the wing pieces in a bowl.
  3. Mix the melted butter, pepper sauce, paprika and salt together to make a marinade.
  4. Pour most of the marinade over the chicken wings but keep about 2 tbsp back for later. Mix the chicken wings with the marinade. Cover and marinate in the 'fridge for at least 30 minutes.
  5. Place the wings onto a baking tray and bake at 200°C/400°F fan oven, 225°C/440°F normal oven for 20 minutes.
  6. Turn the wings over and bake for a further 20 minutes.
  7. Place the hot wings into a clean bowl, add the remaining marinade and mix well. Serve with Blue Cheese Dip and some celery sticks.
Preparing the Blue Cheese Dip
  1. Mix the sour cream and mayonnaise together in a bowl. Add the garlic and blue cheese.
  2. Either use a fork or a food processor to mix the sauce, depending on how chunky you want it. Finish off by mixing in the white vinegar.
Titli's Tips
After 40 minutes of baking the wings should be crispy. If they are not simply pop them back in the oven for a further 10 minutes.

Traditionally the wings are deep fried until crispy and Frank's Hot Pepper Sauce is also traditional (don't use Tabasco - it's TOO hot!). You can make this more spicy by reducing the amount of butter in the marinade and adding more paprika.
