Bubble and Squeak
This Bubble and Squeak recipe is a great way to use up leftover vegetables. Just make sure you have plenty of mashed potatoes on hand!

  • 1 medium onion, diced
  • 2 tbsp of butter, margarine or oil
  • A pile of leftover mashed potato
  • Some boiled cabbage
  • Some cooked carrots
  • Maybe some boiled brussel sprouts
  • A few peas perhaps
  • A bit of cooked swede or turnip if you have any
  • Salt
  • Pepper
  1. Heat the oil in a pan over a medium heat. Add the onions and stir-fry for about 5 minutes.
  2. Add in all the cooked vegetables and the mashed potato. Mix well.
  3. Season with salt and pepper
  4. Continue stirring the mixture over a medium heat for about 10 minutes. It should both bubble and, occasionally, squeak. That's why it's called Bubble and Squeak.
  5. After about 10 minutes press the mixture on the bottom of the pan, turn down the heat and cook for a further 2 minutes.
  6. Turn the mixture out onto a plate and serve
Titli's Tips
The mashed potato is essential and should be in enough quantity to hold the vegetables together. Any other vegetables are optional, but cabbage goes particularly well in this dish.

Some people like to brown their Bubble and Squeak in the pan. You can cook it as much or as little as you like!

Serve with cold meat or sausages and maybe some brown sauce or a bit of leftover gravy.
