Bihari Kabab
Bihari kabab is a spicy South Asian beef kabab which is simple to prepare.

Instructions
- Thinly slice the beef into strips about 1" (2-3 cm) wide and 2-3" (5-10 cm) long.
- Cut the onion in half. Slice one half thinly and grate the other half.
- Fry the sliced onion gently in the tsp of oil until the onions are brown and sticky. Remove from the heat and place the fried onions on a chopping board.
- Finely dice the fried onion.
- Place all the ingredients except the meat into a large bowl and mix well.
- Add the meat and mix well to ensure the meat is covered. Cover and place in the 'fridge to marinate overnight.
- Thread the meat onto skewers "concertina-style". Rub and leftover marinade on the kebabs.
- Place on a barbecue or under a hot grill until the kebabs are well cooked (15-20 minutes)
Titli's Tips
Serve with chapatti, matchsticks of fresh ginger, sliced chillis and some slices of onion.
If you can't get papaya you can also tenderise the meat by bashing the thin strips of beef with a heavy object.
If you are grilling the kebabs you can pour the juices over the cooked kebabs or mop them up yourself with a few chapattis! Naughty!
