Bhindi Bhaji
Bhindi (okra) bhaji makes delicious side dish for any Desi meal. This recipe is quite spicy, so adjust the chillis according to your taste.

Ingredients
  • 250 g (8 oz) okra
  • 1 medium onion, finely chopped
  • 1 tomato, peeled, de-seeded and finely chopped
  • 3 green chillis, finely chopped
  • 1 tbsp garlic & ginger paste
  • 3 tbsp mustard or vegetable oil
Spice mix 1
  • 1 tsp mustard seeds
  • 1 tsp coriander seeds
  • ½ tsp fenugreek seeds
Spice mix 2
  • 1 tsp turmeric
  • 1 tsp cumin seeds
  • 1 tsp paprika
  • ½ tsp asafoetida
Instructions
  1. Wash and dry the okra. Trim the tops with a sharp knife.
  2. Heat the oil in a pan and fry Spice mix 1 for about 1 minute.
  3. Add the onion and the garlic & ginger paste and fry gently for 10 minutes.
  4. Add the chillis, tomato and Spice mix 2 and fry for a further 2 minutes.
  5. Add in the okra and stir-fry for a further 10 minutes.
  6. Season with salt if desired and serve.

When buying okra avoid the hard scaly ones – the okra should be soft and pliable. Just like me!
