Bhindi Bhaji
Bhindi (okra) bhaji makes delicious side dish for any Desi meal. This recipe is quite spicy, so adjust the chillis according to your taste.

Instructions
- Wash and dry the okra. Trim the tops with a sharp knife.
- Heat the oil in a pan and fry Spice mix 1 for about 1 minute.
- Add the onion and the garlic & ginger paste and fry gently for 10 minutes.
- Add the chillis, tomato and Spice mix 2 and fry for a further 2 minutes.
- Add in the okra and stir-fry for a further 10 minutes.
- Season with salt if desired and serve.

When buying okra avoid the hard scaly ones – the okra should be soft and pliable. Just like me!
