"Better Than Sex" Cake

Ingredients
For the base
  • 100 g (3½ oz) unsalted butter
  • 150 g (5 oz) flour
  • 1 tbsp sugar
For the custard
  • 250 ml (8 fl oz) milk
  • 4 tbsp sugar
  • 2 tbsp flour
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • 2 egg yolks
For the creamy layer
  • 125 g (4 oz) cream cheese, e.g. mascarpone
  • 4 tbsp sugar
  • ½ tsp vanilla extract
  • ½ tsp lemon juice
For the remaining topping
  • Fruit (pinapple, raspberries, strawberries…)
  • 1 jar of caramel sauce
  • 125 g (4 oz) creme fraiche
Instructions
  1. Preheat the oven to 170°C.
  2. Prepare the base: Mix together butter, sugar and flour until the mixture is smooth and sticks together.
  3. Butter a 23cm (9") cake tin and press the mixture evenly onto the bottom of the tin. Bake at 170°C for 20-25 minutes until golden. Allow to cool.
  4. Prepare the custard: Beat the egg yolks and put aside. Beat the milk, sugar and flour in a pan and bring to the boil with constant stirring.
  5. Add in the egg yolks and simmer with stirring for a further 2 minutes.
  6. Remove from the heat and add in the vanilla essence and butter. Whisk until smooth, pour into a bowl and allow to cool in the ‘fridge.
  7. Prepare the creamy layer: Beat the cream cheese, sugar, vanilla essence and lemon juice together until smooth.
  8. Construct the cake: Spread the base with a layer of caramel sauce, then a layer of fruit. Add the layer of custard and chill in the ‘fridge for at least 30 minutes.
  9. Cover with a layer of the cream cheese and finally add a layer of creme fraiche or whipped cream. To be really decadent, drizzle over some chocolate sauce.
  10. Tell your partner that the relationship is over and settle down to your new life with this cake.
Titli's Tips
If your kitchen is quite warm you may need to chill the cake at various stages during its construction or it may start oozing everywhere. Just wipe up any ooze with a kitchen towel. The cooler the ingredients the neater your final cake will be. Keep in the ‘fridge before serving.
