Beef and Bean Curry
A quick and easy meal that is low in fat and high in taste.

Ingredients
  • 300 g (10 oz) good lean beef (sirloin, rump, fillet…)
  • 150 g (5 oz) runner beans, sliced (or French beans or mangetout)
  • 1 red onion, cut into thin wedges
  • 1½ tbsp curry paste
Instructions
  1. Remove any excess fat from the meat and slice finely. Dry-fry in a non-stick pan for 2 minutes. Remove the meat from the pan with a slotted spoon and leave the juices behind.
  2. Add the red onion and stir-fry for 2 minutes to soften. Add the curry paste and stir-fry for another minute.
  3. Add in the beans, the beef and 150 ml (5 fl oz) of water and continue to cook for about 5 minutes or until the beans are tender.
  4. Season with salt and pepper if desired and serve with boiled rice.
Titli's Tips
Don’t be tempted to use cheap cuts of meat for this recipe. You simply cannot make a good stir-fry from stewing steak!

This recipe also works very well with chicken.
