Honey Banana Oatmeal Cookies
These cookies use honey for sweetness and have half the usual fat. A great way to use up over-ripe bananas!

  • 2 ripe medium bananas
  • 200 g (6 oz) oatmeal or rolled oats
  • 150 g (5 oz) plain flour
  • 100 g (3½ oz) butter or margarine
  • ⅓ cup (~5 tbsp) honey
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ginger powder
  1. Peel the bananas and mash well in a large bowl. Add the honey and mix well.
  2. Add the butter, then beat well until all the lumps have been removed.
  3. Add a heaped tbsp of the flour, break in the egg, and beat well until smooth.
  4. Seive in the flour, cinnamon, ginger and baking powder. Mix well.
  5. Add the oatmeal and mix to a thick dough.
  6. Blob the dough onto a baking tray and shape them into cookies using a teaspoon. Bake at 180°C for 10-12 minutes.
  7. Remove from the oven and allow to cool for 5 minutes before removing from the tray.
Titli's Tips
The reduced fat in these cookies make them slightly more chewy than regular cookies, but they still taste great!
