Courgettes (Zucchini) baked with Passata and Feta
The herbs and feta cheese in this dish make it inexpensive, simple and full of flavour!

Instructions
- Place half the courgettes in the bottom of a large casserole dish and pour on half the passata.
- Add half the onions, half the feta and half the thyme. Season well.
- Now place layers of the remaining courgettes, onion, feta and thyme. Season well then pour on the remaining passata.
- Cover and bake in the oven at 190°C for 40-45 minutes.
Titli's Tips
Serve with a few boiled potatoes or rice or crusty bread. You’ll need something to soak up the delicious sauce!
