Steak & Kidney Pie (With Mushrooms)

Steak & Kidney Pie is one of those traditional British dishes that is worth making. I add mushrooms into mine, but in fact the same recipe can also be used for Steak Pie and Steak & Mushroom Pie. A four-in-one bonus recipe meal deal!
  • 1 kg (2 lb) stewing steak
  • 800 ml (27 fl oz) beef stock
  • 250 g (8 oz) kidneys (I prefer lamb’s kidneys)
  • 250 g ( 8 oz) mushrooms
  • 250 g (8 oz) smoked meat, chopped
  • 2 onions, chopped,
  • 1 bouquet garni
  • 5 tbsp flour
  • 4 tbsp vegetable oil
  • Pastry
  • Salt
  • Pepper
  1. Prepare the kidneys by peeling off the outer membrane and removing the inside white parts with a pair of scissors. Chop the remaining brown parts.
  2. Heat the oil on a large pan and brown the onions and smoked meat.
  3. Mix the beef with 4 tbsp of flour. Add the meat in batches to the pan and brown on all sides.
  4. Mix together 1 tbsp of flour and the kidneys. Add to the pan and brown the kidneys lightly.
  5. Add the beef stock to the pan and transfer the whole lot to a large casserole dish. Add in the bouquet garni and cook in an oven at 160°C for 2 hours.
  6. (twiddles thumbs).
  7. Remove the bouquet garni from the casserole, add in the mushrooms and leave the mixture to cool for 20-30 minutes.
  8. Line the rim of a pie dish with pastry and spoon in some mixture. Put on a pastry lid a prick a few times with a fork.
  9. Bake in the oven at 220° for 20 minutes. Turn the oven down to 160°C and continue baking for another 15 minutes. Serve.

The pie filling freezes really well so you don’t have to use it all up at once. Great if you are a small family and you want to have S&K pie next month too!
