Bo Kho (Vietnamese Beef Stew)

This immensely flavoured Vietnamese dish is one you should try BEFORE serving to dinner guests. Intense anise and basil flavours combine with garlic, lemon grass and plutonium to blast your taste buds into next week.
  • 500 g (1 lb) of beef, cubed
  • 700 ml (24 fl oz) beef stock
  • 3 shallots
  • 1 small onion, thinly sliced
  • Bunch of fresh basil
  • 2 red chillies, chopped
  • 3 garlic cloves, chopped
  • 3 tbsp fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp lemon grass (or use 2 fresh stalks, bruised and chopped)
  • 1 tbsp turmeric
  • 1 tbsp curry powder
  • 1 tbsp of brown sugar
  • 4 star anise
  • 2 tbsp sesame oil
  1. Dry roast the star anise in a pan over a high heat for 5 minutes, then grind to a powder.
  2. Mix together the beef and tumeric and allow to stand for ½ hour.
  3. Heat 2 tbsp of sesame oil in a large pan and add the shallots, garlic, lemon grass and chillies. Stir-fry for 2 minutes.
  4. Add the curry powder, most of the star anise and the beef. Stir-fry for 5-10 minutes until the beef is browned on all sides.
  5. Add the beef stock, the fish sauce, the soy sauce and the sugar. Bring to the boil and simmer for 45 minutes or until the meat is tender.
  6. Chop the basil and add to the pan together with the remaining star anise powder. Stir and serve.

Titli's Tips
This version uses turmeric, but if you want to make the authentic version fry a teaspoon of annatto seeds in a small amount of oil, remove the seeds and use the oil for marinading the beef.
