Cock-A-Leekie Soup

Cock-a-Leekie Soup is a traditional Scottish dish with many regional variations. So simple yet so delicious!
Ingredients
  • A 1 kg (2 lb) chicken (or a selection of chicken bits)
  • 1 kg (2 lb) leeks, cut into 1 cm (½") slices
  • 12 prunes
  • Water or stock
  • Salt
  • Pepper
Instructions
  1. Place the chicken in a large pan and cover with water or stock. Bring to the boil, cover and simmer for 30 minutes.
  2. Add the prunes and about one third of the leeks. Season well, cover and simmer for a further 30 minutes.
  3. Remove the chicken from the pan and put to one side to cool. Add the remaining leeks and boil gently for about 30 minutes to reduce the liquid slightly.
  4. Once the chicken is cool enough to handle, separate the meat from the skin and bones. Shred the meat into bit-sized pieces.
  5. Add the chicken meat to the pan and continue to cook for a further 5 minutes to warm the chicken through.

  7. There are a number of variations of this dish. The most common variations are:
  8. Add 3-4 chopped or grated carrots at Step 3
  9. Add 125 g (4 oz) or long-grain rice at Step 3
  10. Add herbs, particularly parsley, into the soup at Step 3
  11. You can try any or all of the variations, but whichever you try the soup is best served with which a chunk of bread!
