Chicken Kebab Caribbean-Style

With sweet lime and cinnamon flavours these kebabs may be low on fat but are high on taste.
Ingredients
  • 400 g (14 oz) chicken breast, cubed
  • 1 mango, peeled and cut into chunks
  • 2 tsp brown sugar
  • 1 tsp ground cinnamon
  • Grated rind of a lime
  • Juice of a lime
  • Salt
  • Pepper
Instructions
  1. Place the lime juice, rind, sugar and cinnamon in a large bowl and mix well. Season lightly with salt and pepper.
  2. Add the chicken and stir to coat the chicken. Cover and leave to marinate for about an hour.
  3. Thread the chicken pieces and mango pieces onto skewers. Grill (broil) or barbecue for 10-12 minutes, turning occasionally.

Titli's Tips
Serve on a small bed of rice with a salad.

Although fresh mango is preferable, this dish works just as well with tinned mango.
