Tomato & Basil Soup

This colourful soup is very easy to prepare and is great for the opening course of a dinner.
  • 1 kg (2 lb) tomatoes, chopped
  • 1 medium onion, finely diced
  • 1 carrot, finely diced
  • 1 stick of celery, finely diced
  • 1 large bunch of fresh basil, coarsely chopped
  • 5 tbsp cream (optional)
  • 2 garlic cloves, finely diced
  • 1 tsp sugar
  • 2 tbsp oil
  • Salt
  • Pepper
  1. Heat the oil in a large pan and sauté the onions, carrot and celery gently for 3-4 minutes until soft.
  2. Add the garlic and sauté for a further minute.
  3. Add the tomatoes, basil, sugar and 250 ml (1 cup) of water. Bring to the boil, cover and simmer gently for 45 minutes, stirring from time to time.
  4. All the soup to cool slightly and process it in a food processor or with a hand blender until smooth.
  5. Strain the soup through a course sieve to remove any seeds and return the soup to a clean pan.
  6. Adjust the seasoning and the sweetness. Add the cream and bring back to the boil before serving.

Titli's Tips
If you can’t get basil you can always use a tsp or two of pesto. This soup also works well with coriander (cilantro) and oregano.
