Butter Chicken (Chicken Makhani) |

Butter Chicken (or Chicken Makhani) is a popular dish at most Asian restaurants. This slightly spicy curry has a rich flavour.
- 500 g (16 oz) cubed chicken
- 3 tbsp butter
- ¼ cup single (pouring) cream
For the marinade
- 250 ml (8 fl oz, 1 cup) plain yogurt
- 2 tsp garlic & ginger paste
- 2 tsp lemon juice
- 1 tsp tomato paste
- ¼ tsp ground cardamom
- ¼ tsp garam masala
- ¼ tsp paprika
For the sauce
- 500 g (16 oz) passata (seived tomatoes)
- 1 large onion, diced
- 2 tbsp ghee or butter
- 1 tbsp garlic & ginger paste
- ¼ cup dried fenugreek (methi) leaves
- ¼ cup dried curry leaves
- 6 green cardamoms
- ½ tsp salt
- ½ tsp sugar
- ½ tsp chilli powder
- ¼ tsp ground cloves
- ¼ tsp ground cinnamon
- Combine all the marinade ingredients in a bowl and mix well.
- Combine the chicken and the marinade. Allow to stand in the ‘fridge for at least 2 hours.
- Prepare the sauce: Heat the 2 tbsp of ghee in a pan and sauté the onions gently for 3-4 minutes until soft. Add the garlic & ginger paste and cook for a further 2 minutes.
- Add the dry spices (but not the leaves) and cook for 30 seconds, then add the passata and dried leaves. Mix well and simmer gently for 10 minutes.
- Remove the sauce from the heat and allow to cool slightly. Process well in a food processor or with a hand blender, then pass the sauce through a sieve. Place the sauce in the ‘fridge until ready to use.
- Heat the 3 tbsp of butter in a pan. Add the chicken and its marinade and cook gently for 5 minutes.
- Add in the tomato sauce, bring to the boil, cover and simmer gently for about 15 minutes.
- Add in the cream and serve.

Garnish with coriander and serve with roti or rice.
You can also use chicken tikka with the sauce to make a butter chicken which has a slightly smokey flavour. Simply add the chicken tikka to the butter in Stage 6, pour on the tomato sauce and simmer for just a few minutes.
