Green Tomato Chutney
Author: hKczGjSA6Xc
Don’t put unripe tomatoes on your window sill for days on end. Make chutney with them!
  • 1 kg (2¼ lb) green tomatoes, chopped
  • 400 ml (14 fl oz) vinegar
  • 200 g (7 oz) brown sugar
  • 200 g (7 oz) shallots or onions, finely chopped
  • 100 g (3½ oz) raisins or sultanas
  • 1 large cooking apple, peeled, cored and diced
  • 1½ tsp salt
  • 1 tsp ground black pepper
  1. Add all the ingredients into a large pan and bring gently to the boil.
  2. Simmer gently for 1½ to 2 hours, stirring from time to time.
  3. The mixture will darken and thicken. It’s ready when you can see the bottom of the pan when you draw a spoon or spatula through.
  4. Pour the hot chutney into clean, sterile jars and seal with a clean and sterile lid. Date and label.

The quatities here make about 1 kg (2.2 lb) of chutney. Allow to mature for 2-3 months. Goes great with cheese and cold meats!
