Courgettes (Zucchini) baked with Passata and Feta

The herbs and feta cheese in this dish make it inexpensive, simple and full of flavour!
  • 3 courgettes (zucchini) cut into slices
  • 1 red onion cut into rings
  • 500 ml (16 fl oz) passata
  • 60 g (2 oz) feta cheese, crumbled
  • 2 tsp thyme
  • Salt
  • Pepper
  1. Place half the courgettes in the bottom of a large casserole dish and pour on half the passata.
  2. Add half the onions, half the feta and half the thyme. Season well.
  3. Now place layers of the remaining courgettes, onion, feta and thyme. Season well then pour on the remaining passata.
  4. Cover and bake in the oven at 190°C for 40-45 minutes.
