Beef with Orange & Ginger |

This stir-fry is both tasty and kind to your waistline.
- 300 g (10 oz) lean beef fillet, cut into very thin strips
- 1 carrot, cut into matchsticks
- 2 spring onions (scallions) thinly sliced
- 1″ (2 cm) piece of ginger, finely chopped
- Juice and grated rind of an orange
- 1 tbsp soy sauce
- 1 tsp cornflour (cornstarch)
- 2 tsp vegetable oil
- Mix beef, orange juice and orange rind in a bowl and allow to marinate in the ‘fridge for at least 30 minutes.
- Drain the meat and keep the juices. Now combine the meat, soy sauce, ginger and cornflour.
- Heat the oil over a medium-high heat in a pan and stir-fry the meat mixture for 5 minutes.
- Add the carrots and stir-fry for a further 3 minutes to soften the carrots.
- Add in the spring onions and the reserved juice. Simmer for a few mintues to thicken the sauce. Season lightly and serve.

You should use a good quality cut of beef for this – sirloin, rump or fillet. Don’t be tempted to use cheaper cuts such as braising steak; the meat will be too tough.
Serve with boiled rice or noodles.
