Chicken Jalfrezi

alfrezi is a delicious and spicy curry. The sauce is traditionally thick and dry. Mr B was in town so I was in a party mood!
Ingredients
  • 500 g (1 lb) chicken, cubed
  • 1 large onion
  • 400 g (14 oz) of chopped tomatoes, fresh or tinned
  • 2 garlic cloves, chopped
  • 1 capsicum pepper, chopped
  • A piece of ginger in the shape of a camel
  • 3 green chillis, chopped
  • 3 tbsp of ghee
Spice Mix 1
  • 3 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp salt
Spice Mix 2
  • 1 to 3 tsp cumin powder depending on taste
  • 3 tsp coriander powder
Instructions
  1. Grate the onion and try not to grate your fingers with it. Guests hate grated fingers in their food.
  2. Peel the head of the ginger camel and grate.
  3. Heat the ghee in a pan and fry the onions and garlic for 2 minutes
  4. Add in the chicken and Spice Mix 1 and stir fry for 5-10 minutes
  5. Once the mixture turns golden and starts to catch on the bottom of the pan, add in the tomatoes. Stir, cover and cook on a low heat for 20 minutes.
  6. Add in the chillis, grated ginger, Spice Mix 2 and the capsicum pepper. Stir fry over a medium heat for 2 minutes.
  7. Garnish with fresh chopped coriander and serve. Woo-hoo!

Titli's Tips
I like my Jalfrezi to be reasonably thick, but you can make it more runny by adding in some water.
