Zarda is a Desi sweet rice dish which is quick and easy to make. It’s also quite filling, especially after a bowlful of curry!
- 150 g (5 oz/1 cup) basmati rice
- 2 tbsp raisins or sultanas
- 2 tbsp chopped almonds or pistachios
- 4-12 tbsp of sugar, according to taste
- 4 green cardamoms
- 1 tbsp cream
- 1 tsp orange zest
- Big pinch of saffron
- 1 tbsp ghee
- Soak the rice in cold water for 5 minutes, then drain.
- Place the rice in a pan of water and add 2 of the cardamoms and the pinch of saffron. Bring to the boil.
- Simmer the rice until just cooked (5-7 minutes) then drain.
- Heat the ghee in a pan and gently fry the remaining 2 cardamoms for 2 minutes.
- Add in the rice and sugar, cover and cook on a very low heat for 5 minutes.
- Add in the cream, orange zest, nuts and dried fruit. Mix well and serve.

Zarda is best served warm. Adjust the amount of sugar depending on how sweet you like your desserts.
In place of the saffron you can also use a few drops of yellow or orange food colouring.
