Mushroom Pilao Rice

Mushroom Pilao uses spices which compliment the earthy flavour of the mushrooms to give a very moorish and tasty rice dish.
  • 150 g (5 oz/1 cup) basmati rice
  • 6 medium mushrooms cut into quarters
  • 1 garlic clove, thinly sliced
  • 2 green cardamoms
  • 1 tsp tomato paste
  • ¼ tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp kalonji (black onion seeds)
  • 1 tbsp ghee or vegetable oil
  1. Soak the rice in cold water for 5 minutes, then drain.
  2. Heat the oil in a pan. Add the garlic, spices and mushrooms. Stir-fry for 2-3 minutes.
  3. Add the tomato paste, the rice, and 250 ml (1 cup) of water.
  4. Bring to the boil, cover, and cook over a very low heat for 10-15 minutes until all the water is absorbed.
  5. Fluff up the rice with a fork and serve.

For a more colourful variation, add a handful of frozen peas into the pan during the final cooking.
