Muffins

This basic muffin mix can be used to make all sorts of muffins. In this video I make chocolate chip and blueberry muffins.
Ingredients
  • 300 g (10 oz/2 cups) flour
  • 175 g (6 fl oz/1 cup) sugar
  • 125 ml (4 fl oz/½ cup) milk
  • 125 g (4 oz/½ cup) butter
  • 2 eggs
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp vanilla essence
For chocolate chip muffins
  • 350 g (12 oz) chocolate chips
For blueberry muffins
  • 250 g (8 oz) blueberries
For chocolate muffins
  • 70 g (2½oz/½ cup) baking cocoa
Instructions
  1. Blend together the butter, sugar, eggs and salt until creamy smooth.
  2. Sift in the flour and baking powder and whisk until smooth.
  3. Whisk in the milk, adding half the milk at a time.
  4. Add in the vanilla essence and your choice of additive!
  5. Divide into 12 portions in a lightly-greased muffin tin (or use paper muffin cups).
  6. Bake at 170°C for 30 minutes.
  7. Allow to cool before removing from the muffin tin.

Titli's Tips
As well as having these plain, you can add pieces of apple, or spice them with cinnamon, or add sliced almonds, or… Do I have to tell you everything?!
