Tandoori Chicken

Tandoori Chicken is a classic Asian dish, and it is surprisingly easy to make. So go and make some!
  • 4 chicken thighs or breasts
  • 150 g (5 fl oz) plain yoghurt
  • 2 tbsp vegetable oil
  • 1½ tsp paprika
  • 1½ tsp cumin powder
  • 1½ tsp coriander powder
  • 1 tsp ginger powder
  • 1 tsp salt
  • 1 tsp garlic paste
  • Red food colouring
  1. Remove the skin from the chicken and make some deep slashes into the flesh.
  2. Combine the yoghurt, oil garlic, salt and spices in a bowl. Add a few drops of red food colouring and mix well.
  3. Add in the chicken pieces and mix to coat well. Cover and leave in the ‘fridge overnight.
  4. Shake the excess marinade from the chicken pieces and place them on a wire rack in a grill pan or baking tray.
  5. Bake at 200°C for 35 minutes. Eat hot or cold!

Titli's Tips
By placing the chicken on a wire rack above a tray you allow the juices to fall away and create chicken which is evenly cooked on all sides.
