Roasted Garlic, Lemon and Oregano Chicken |

This roast chicken dish takes no time to prepare at all and is bursting with garlic, lemon and oregano flavours.
- 4 chicken quarters
- 400-500 g (1 lb) potatoes cut into segments
- ⅓ cup lemon juice
- ⅓ cup olive oil
- 4 garlic cloves, thinly sliced
- 2 tsp dried oregano
- Salt
- Ground black pepper
- Mix the lemon jiuce, olive oil, garlic and oregano in a jug.
- Line the bottom of a baking dish with the potatoes. Place the chicken quarters on top.
- Pour the mixture over the chicken. Pour 1 cup of water into the dish but not over the chicken.
- Season well with salt and pepper.
- Roast in an oven at 180°C/360°F normal oven, 165°C/330°F fan oven for about 1½ hours or until the chicken is nicely browned.

Serve with crusty bread and a green salad.
You can also use lamb shanks for this dish and it is just as delicious. Increase the cooking time and add a little more water about half way through cooking.
