The same mixture of herbs and spices that you would use to make homemade KFC can be used to make truly delicious baked potato.
- 2 baking potatoes
- 100 g (3½ oz) grated cheese (optional but recommended!)
- 1-2 tsp of salt
- Butter
- Grated parmesan cheese
For the KFC mix
- ½ tsp salt
- ½ tsp oregano
- ½ tsp basil
- ½ tsp sage
- ½ tsp marjoram
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp garlic powder
- Wash the potatoes and while still damp rub them all over with salt.
- Poke a metal skewer through each potato and bake at around 170°C/340°F for an hour or so until the centre of the potato is soft.
- Remove the skewers and cut the potatoes in half parallel to their long side. Scoop the insides into a bowl.
- Add a knob of butter and the cheese. Mash well.
- Add a tsp of the KFC mix. Mix well and taste. Add extra KFC mix if required.
- Spoon the mixture back into the empty potato skins. Sprinkle on a little extra cheese and maybe some parmesan cheese.
- Place on a baking tray and put back in the oven for around 20 minutes.

Serve with coleslaw and a salad for a tasty supper. Store the KFC mix in a sealed container such as an empty spice jar.
