Tunisian Takoua is an easy to make dessert which goes perfectly with a strong cup of coffee.
  • 250 g (8 oz) sesame seeds
  • 50 ml (3 tbsp) orange blossom water or rosewater
  • 50 g (2 oz) caster (superfine) sugar
  • 50 g (1 oz) icing (confectioner's) sugar
To garnish
  • Mint leaves
  • Orange segments
  1. Toast the seeds in a flat pan over a medium heat.
  2. Pour the seeds into a food processor. Add the orange blossom water and whizz to a coarse paste.
  3. Add the sugar and continue blending for a further 2 minutes.
  4. Turn the paste out onto a plate. Form the paste into small balls about 2 cm (¾") in diameter and roll in icing sugar to coat them.

Titli's Tips
Make sure you keep stirring the sesame seeds during toasting to ensure they don't burn. The paste is quite coarse but it is sticky enough to make good balls with.

I like to serve these on mint leaves with segments of orange that have been trimmed to remove their skins. Goes nicely with a strong cup of coffee!

Takoua will keep in an airtight box for up to 2 weeks.
