Spicy Chicken Liver

Rich in flavour, this spicy chicken liver tapas really gets your tastebuds going!
  • 250 g (8 oz) chicken livers
  • 60 g (2 oz) plain flour
  • ¼ tsp paprika
  • ¼ tsp cumin
  • ¼ tsp coriander
  • 2-3 pinches of nutmeg
  • Salt
  • Pepper
  • Oil for shallow frying
  • Mint leaves and cocktail sticks for decoration
  1. Trim and halve the chicken livers.
  2. Place the flour in a bowl together with the spices. Season well, then mix.
  3. Toss the chicken livers in the flour, then shallow fry in about 5mm (¼") of oil for 3-5 minutes. Turn halfway through cooking.
  4. Once the outside is slightly crispy remove from the oil and serve.

Titli's Tips
The outside of the liver pieces should have a slight crunch to them. The inside should be slightly pink and tender with that sweetnes that comes from chicken liver.
