Chicken with Lemon and Garlic

This tapas combines lightly sautéed chicken with lemon and garlic to make a mouthwatering dish of delight!
  • 1 chicken breast
  • 1½ tbsp olive oil
  • ¼ of an onion, finely chopped
  • 2 garlic cloves, crushed
  • Juice of 1 lemon
  • Grated rind of 1 lemon
  • 1 tbsp chopped parsley
  • Salt
  • pepper
  1. Slice the chicken breast thinly across its width.
  2. Heat the oil in a pan over a medium heat. Add the onion and cook for 5 minutes to soften.
  3. Add the garlic and cook for a further 30 seconds.
  4. Add the chicken and cook for around 10 minutes until the chicken is lightly browned.
  5. Add the juice and rind of the lemon, turn the heat down a little and deglaze the pan.
  6. Add the parsley, season well, mix and serve.

Titli's Tips
Decorate this dish with a few sprigs of flat-leaf parsley and a few strips of lemon rind. You can make a meal out of this by doubling the quantities and serving with rice.
