Sautéed Garlic Mushrooms

This garlic mushrooms tapas is quick and easy to prepare. I never met anyone who didn't like garlic mushrooms!
  • 250 g (8 oz) mushrooms
  • 2 tbsp olive oil
  • 2 tbsp chopped flat-leaf parsley
  • 2 garlic cloves, crushed
  • Juice of ½ lemon
  • Salt
  • Pepper
  1. Wipe the mushrooms with kitchen paper. Trim the stalks level with the cap. Cut any large mushrooms in half.
  2. Heat the oil in a pan over quite a high heat. Add the garlic and stir fry for 30 seconds.
  3. Add the mushrooms and stir until the mushrooms have absorbed all the oil.
  4. Turn the heat right down and cook very gently for 6-7 minutes until the liquid comes out of the mushrooms.
  5. Add the lemon juice and season well. Turn the heat up and sauté for a few more minutes until almost all the liquid has gone.
  6. Add the parsley and continue to sauté for another 30 seconds. Serve

The real key to this dish is the slow cooking of the mushrooms once they have absorbed the oil. The resulting mushrooms are tender and juicy. You might need a little bread to mop up any juices on your plate.
