Kentucky Fried Chicken

This copy-cat Kentucky Fried Chicken recipe will give you homemade KFC by the bucket load, and be much cheaper too!
  • 1 chicken, jointed and skinned, breasts cut in half.
  • 2 eggs, beaten
  • Plain flour for dredging
  • Oil for deep frying
Brining solution
  • 2 litres (4 pints) cold water
  • 2 tbsp salt
  • 2 tbsp fish sauce (optional)
Coating mixture
  • 100 g (3½ oz) plain flour
  • 2 tbsp monosodium glutamate (entirely optional!)
  • 2 tsp salt
  • 1 tsp dried oregano
  • 1 tsp dried sage
  • 1 tsp dried basil
  • 1 tsp dried marjoram
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  1. Prepare the brining solution then allow the chicken pieces to soak in it for at least 2 hours.
  2. Remove the chicken from the solution and pat dry with some kitchen paper.
  3. Prepare the coating mixture and preheat your oil to 180°C/360°F.
  4. Dredge the chicken pieces in the flour, then the beaten egg, and finally the coating mixture.
  5. Deep fry the chicken pieces for 15 minutes then drain on some kitchen paper.
  6. Serve with a bucket of fries and a gallon of soda pop!

Titli's Tips
This Kentucky Fried Chicken Recipe come very close to the real thing but it will never be identical because the process used by KFC is slightly different. I think this recipe tastes just fine without the monosodium glutamate but you are welcome to add it if you wish.

The nutritional information given is per chicken piece and should be used as a guide only. Thigh pieces contain more fat than the breast pieces, for example.
